Monday I made "French Bread Rolls to Die For" (see previous post) and today I made "Diana's Hawaiian Bread Rolls" (see recipe below) Oh boy, oh boy! These are two keepers to make over and over. I used my powdered butter for the shortening, sugar for the honey, and whole wheat flour since I don't have the other products (I don't like the taste of honey in baked goods, but honey butter is scrumptious!) Proof your yeast with the water and 1 tbls of the sugar first, then add the other ingredients to your mixer (if you don't have a bread machine.) Knead in the mixer for approximately 8 minutes, place on a flour surface to knead with your hands and shape into a nice ball, then I spank the air out of it (it hurts my hand, but the sound is priceless like spanking a bare bottom! My kids know when they hear that sound to start yelling and whining like they are getting spanked....okay, we have weird humor, but I don't like spanking cute little bottoms so we have fun spanking the bread dough, which looks like a fat little bottom,) then place in a large bowl covered with a damp towel to rise until doubled....then follow the instructions below for forming the rolls.Ingredients
1 1/2 cups warm water
1 egg
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 tablespoon molasses
1 tablespoon honey
5 tablespoons white sugar
2 tablespoons dry milk powder
2 tablespoons butter flavored shortening
4 1/2 cups bread flour
2 teaspoons active dry yeast
DIRECTIONS
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle for a 2 pound batch; press Start. The dough can be a bit sticky, so you may want to add a little bit more bread flour as it mixes.
When the dough cycle is complete, turn the risen dough out on a lightly floured surface and divide into twelve equal pieces. Form the pieces into rounds and place on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
Bake in preheated oven for 15 minutes, until golden brown.
