Zucchini and Banana Breads

Our lovely Leah loves to be in the kitchen and bake lots of yummy goodies, especially in the fall when the weather cools. She shared two favorites bread recipes with us.
Zucchini bread
Makes 2 Loaves
4 Eggs
3 C Zucchini, shredded
3 C sugar
1 1/2 C Oil***
3 C Flour
1 1/2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Nutmeg
1 tsp Cinnamon
1 tsp Salt
1 C Raisins
1 C Nuts
Combine all ingredients and mix well. Pour into well greased AND floured pans (if not greased/floured well, bread will stick!) Bake 1 hour at 350 degrees.
***For a low-fat bread, substitute oil with 1 C unsweetened applesauce. Be sure to reduce amount of sugar too, because the applesauce naturally adds sugar.***

Low-Fat Banana Bread
Makes 1 large or 2 small loaves
4 very ripe Bananas, mashed
1 1/2 C Flour
1 C Sugar
2 T Butter, softened
1 tsp Vanilla
1 tsp Baking Soda
1/2 tsp Baking Powder
1 Egg
2 T Applesauce
**Add some chopped nuts as well. It doesn't keep it quite as 'low-fat' but adds great texture!**Combine all ingredients, mix well. Pour into greased pans. Bake 50-60 minutes at 350 degrees.
